1st Slow Food BBQ with Wines from Winemaker Joe Bastianich
LAS VEGAS — Slow Food Las Vegas embarked upon a first of its kind storytelling through barbeque event last Sept.12,2009. Together with Bar 10 Ranch, Slow Food Las Vegas joined forces with The Ritz Carlton Lake Las Vegas (LLV), Winemaker Joe Bastianich to tell the story of the 250,000 acre, Arizona-based, grass-fed, Red Devon beef cattle ranch.
For over 100 years, Bar 10 Ranch and the Heaton family have raised cattle on the North West rim of the Grand Canyon. They have raised only superior calves, yet sold their calves at auction for the same price as lower classes of beef. From the auction block to the dinner table, the Heaton’s had no mechanism available to track the calves' location, treatment, or quality of life. This problem was only magnified by the industrialization of beef production coupled with inhumane animal treatment and food borne illnesses. To maintain their integrity within the beef industry, the Heaton's decided to directly provide consumers with healthy, safe, high quality, gourmet all natural grass fed beef. Red Devon beef cattle bring to the table more natural marbling and better flavor than other breeds of 100% grass fed cattle. Today, the Heaton’s Bar 10 Ranch controls how the cattle are treated from the day the calves are born until dinner is served.
